In a large saucepan, heat 1 tablespoon of coconut or olive oil on medium heat. Add 8 oz of thinly sliced chicken, 4 oz of sliced mushrooms and half of a bell pepper thinly sliced. Cook until chicken is lightly browned and fully cooked and the veggies are tender. Add 1 qt of Ocean’s Halo® Thai Coconut Broth and bring to a simmer. Garnish with lime and cilantro. Enjoy!
